Easy Strawberry Avocado Salad

I’ve been a bad blogger. Bad, bad KT for neglecting the readers (all 2 of you) and leaving the blog to rot like an old banana. Don’t worry though; I’m currently doing penance in time out…..
I wish I had some good excuse for completely ignoring my blog, but the truth is that it’s just been way too humid for me to even think about getting creative in the kitchen. My kitchen adventures lately have been strictly in and out affairs with tried and true recipes.  Nothing really exciting to report, but with autumn right around the corner I’m back on the wagon!
The upside of all this neglect is that it’s allowed me to get some serious wedding planning done. Ladies and gentlemen we have a dress! I’m so excited, but Mr. Officer is a little bummed that I won’t let him see a picture. Apparently no one told him that seeing the bride before the wedding is bad luck. However, I’m willing to make a one-time exception just to stop the bellyaching, so without further ado……a dress pic:
 What?! You didn’t think I’d actually post a full picture of the dress, did you? Is that the skirt, the bodice, front, back? The possibilities are endless and you all will just have to wait until the big day to get the full effect.




Alright fine, to make it up to you and remind you of the handsome guy that I’ll be marrying, a gratuitous Mr. Officer shot from the beach. Just um, disregard the creepy saltwater taffy puppets flipping around in the background. Oh yeah, and below the picture,  I also have a delicious recipe for you to enjoy!
 

Easy Strawberry-Avocado Salad
 
1 avocado, chopped
2 breaded chicken cutlets, baked and chopped (I used Fresh Direct breaded almond chicken cutlets, but you can use whatever floats your boat)
1 package romaine lettuce
6 strawberries, sliced
2 handfuls cashew halves
Red wine vinaigrette, to taste (I used approximately 2 tablespoons of Brianna’s brand)
1.       Assemble ingredients and toss, couldn’t be easier! No cooking involved.
2.       Convince fiancé that even though he is a manly man, this dinner will be delicious and filling.
3.       Smile brightly and try not to say “I told you so” when he proclaims his dinner delicious and filling.
